I tend to tech the kata to the "familiarity" point, where they can do the kata, but aren't really proficient at it, they teach the bunkai. This tends to make the student understand the moves that they are doing in the kata and speeds the learning process. Usually by the time we get to the 4th kata or so, they have a good grasp of the system and can figure out a lot of the bunkai on their own, but we still go over it frequently.
